Salad & Dressing Recipe

Alright! Yesterday I posted about how I was going to be making a salad from Paleo Leap but because I didn't have all the ingredients I was going to monkey with it and make my own version. I am happy to say that it was a success!
Here's what I did.

I didn't measure anything and truly just winged it, so don't worry and make it to your liking. Trust me, salads aren't rocket science.

Ingredients

Avocado
Dried Cranberries
Leafy Greens
Rice

Dressing

Raw Apple Cider Vinegar
Oil (Olive, rice, etc.)
Paprika
Powdered Mustard
Lime Oil
Black Pepper Oil
Salt

First off I made the dressing. In a bowl I poured in a little bit of apple cider vinegar (for me a little goes a long way) and then added the oil which was around twice as much as the ACV. I roughly did a dash of both paprika and powdered mustard, added a drop of both lime and black pepper oil, and then sprinkled in a bit of salt. Remember, you can always adjust the taste, so taste testing is a good idea. My dressing came out tasting strong all by itself but when it was added to the veggies and rice it was good.

For the salad part I put a layer of hot/warm rice on the bottom, added the greens, sprinkled on the dried cranberries, and then added the sliced avocado. Don't forget to pour on that dressing! ;)

All together this was yummy and I would make it again. If your an experimenter, tell me your versions and inspirational twists that made this salad yummy for you!
